         For a restaurant that has earned its reputation on perfecting the subtleties of Cantonese cuisine and quiet understated interior design. The factors that have brought The Chinese Restaurant to enjoy such success since its opening in 1986 are many. One of the main reasons is undoubtedly Chef Chow Chung, the restaurant’s Chef de Cuisine and one of the early pioneers of the nouvelle-style approach to preparing Chinese food. His philosophy is now widely copied not only in Hong Kong but in restaurants from Australia to Europe.
        He takes traditional Chinese ingredients and blends in elements of western cuisine in a way that is modern, colorful and visually flavors and textures in his dishes that have enchanted diners over the years. One of his signature dishes is double synthesis of ingredients that results in a refreshing beginning to a Chinese meal.
