Wang:
You’ve tasted foods of many cultures, I guess.
Jean:Yes, I have. In America, People like to dine
out for a change at weekends.
Wang:What food is your favorite?
Jean: Chinese food. What struck me most is its varieties
and delicacy. Since China is a large country with more than 50 nationalities and long history, it is not surprising to find that many Chinese eat differently. But I don’t know which varieties are more typical
.
Wang: Well, it is pretty hard
to generalize about Chinese food. Yet there are eight well-known
dishes, Guangdong dishes, Jiangsu dishes, Zhejiang dishes., , Hunan
dishes, Fujian dishes, and Anhui dishes.
Jean: I know that Sichuan dishes are very hot.
But I wonder why Sichuan people like hot food as the weather there
is hot enough.
Wang: They say hot food makes
you perspire. Perspiration will lower your temperature and thus
you’ll feel less hot.
Jean: No wonder
anthropologists say that people eat what their cultures teach them.
